Sourced from a vineyard in the Chittering Valley, this Cabernet Sauvignon is a great expression of warm climate Cabernet. Grown on the ironstone gravels of the Perth Hills, the vines are forced to work hard to survive with the resulting fruit showing great concentration and intensity. The variety’s classic blackcurrant and dark plum are on display, framed with cocoa and spice flavours from the American Minnesota puncheons it is matured in. These elements are supported with fine chalky tannins extracted from the skins after 10 days maceration / fermentation during which the cap was pumped over every 6 hours. This wine has the weight and structure to reward mid to long term cellaring.
