100% Pinot Noir
Pinot Noir grapes from the Carmel Valley were whole bunch pressed. Secondary Fermentation (Methode Traditionelle style) was conducted in the bottle. Extended Maturation on yeast lees in bottle has allowed this sparkling to develop classic yeast autolysis charaters.
