Fruit for this Pinot Noir was hand harvested from the cool climate region of Manjimup. Pre-fermentation cold soaking was followed by a short “wild” fermentation before innoculation with a cultured yeast. The wine shows pretty raspberry and pastille characters on the nose with soft plum and dark cherry flavours on the palate. Velvety tannins give the palate structure and a dry earthy finish.
