N/V Sparkling Shiraz
The fruit is picked from the east facing vineyard at MyattsField in
Carmel Valley.
It is then crushed and fermented on skins before being pressed off
into oak French oak Barriques were it undergoes malolactic frementation
and maturation at minimum sulphar levels.
This process is repeated each year.
In 2008 some of the current vintage shiraz was back blended into the
older material to create a non vintage shiraz before being put to bottle
for secondary fermentation.
Each bottle is hand riddled before being hand disgorged.
