2011 Chardonnay
The fruit for this Chardonnay was sourced from two vineyards. One a dry grown vineyard on the floor of the Bickley Valley, the second,
from the neighbouring vineyard in Carmel.
After whole bunch pressing and settling, the juice was fermented at cold temperatures in stainless steel tanks to retain freshness
and purity of fruit. Bâtonnage (lees stirring) was employed for
three months post ferment to ensure the palate is soft and well rounded.
The resultant wine is an elegant fruit driven palate with subtle
complexity and finesse. While white peach and grapefruit flavours
dominate a full and creamy palate. The finely structured acid ensures the wine finishes crisp and clean with
good length.
