2009 Sparkling Rosè

Hand picked Pinot Noir fruit was sourced from steep slopes in the Carmel Valley.

After crushing, one portion of the fruit spent 48 hours on skins to obtain the vibrant pink hue, before being pressing and blended with the remaining Pinot juice.

Cold primary fermentation was used to retain the delicate fruit flavours. Chardonnay lees were added to the wine post ferment to fill and soften the palate before secondary fermentation was conducted in the bottle.

Each bottle is hand riddled before being hand disgorged.

The bouquet presents crushed strawberries and rose petals, while the palate offers soft, sweet fruit flavours and a creamy texture.
