2009 Méthode Champenoise "Blanc de Blanc"
Made from 100% Chardonnay the fruit was hand picked from a low lying vineyard in the Bickley Valley.
After whole bunch pressing the juice was only partially settled
before racking and innoculation.
Primary fermentation was completed in tank before secondary fermentation was conducted in bottle
(traditional Method).
Each bottle given a minimum of 2 years on yeast lees before being riddled,
dosaged and disgorged by hand.
The wine exhibits subtle yeasty, bread crust notes from it's time on
lees with lively citrus and grapefruit flavours in support. It has a
soft creamy palate with a crisp dry finish.
