2007 Sparkling Rose
Hand picked Pinot Noir fruit was sourced from a low lying vineyard in Bickley Valley.
After crushing, one portion of the fruit spent 48 hours on skins before to obtain the vibrant pink hue, before being pressing and blended with the remaining Pinot juice.
Cold primary fermentation was used to retain the delicate fruit flavours of the Pinot Noir before secondary fermentation was conducted in the bottle.
Each bottle is hand riddled before being hand disgorged.
The bouquet presents crushed strawberries and rose petals, while the palate offers soft, sweet fruit flavours and a creamy texture.
