2006 Cabernet Sauvignon The fruit for this wine was hand picked by friends from our 11 year old, dry grown Bickley Valley Vineyard. Fermented with a traditional Bordeaux yeast, the Cabernet Sauvignon was pumped over 4 times a day before being pressed to a mixture of new and one year old French oak barrels and matured for 12 months before careful blending and bottling. Premium Cabernet Sauvignon makes up 90% of this blend and provides the backbone to the wine. On the palate, intense raspberry flavours dominate with firm velvety tannins ensuring good length and body. 10% Merlot was used to soften and fill the mid-palate. The resultant wine is a full-bodied dry red that may be appreciated now or
cellared for 10 years. |
