2005 Mèthode Champenoise

This is a blend of 55% Pinot Noir and 45% Chardonnay.

The fruit was hand picked from a low lying vineyard in the Bickley Valley.

After pressing the Pinot Noir juice was hyperoxidised (heavily aerated) to remove any pigmentation and then blended with the Chardonnay juice.

Primary fermentation was completed in tank before a secondary fermentation was conducted in the bottle.

Each bottle is hand riddled before being hand disgorged.

Currently this wine is displaying lively, citric sherbert characters, however with its time on yeast lees, it is starting to develop secondary characters of creamy, toast or bread notes.
